Spring Treat: Fruit Pizza

I know your wondering...wheres the pepperoni and mushrooms and sausage and most important the cheese! But this is a fruit pizza, so yes this still has a little cheese...(cream cheese that is) but your toppings now consist of something a little bit healthy, and a little bit sweet! This is such simple and quick recipe and pretty much everyone enjoyed it at our cookout!
The ingredients are really simple!  
1 roll of sugar cookie dough for the crust! 
1 pack of cream cheese (8 oz)
1/2 cup of powdered sugar
1/2 lemon : These three ingredients are for the sauce
Then for the toppings its whatever fruits you enjoy! We used kiwis, pineapples, blueberries, blackberries and strawberries. 
Directions are also really easy!
Roll out your sugar cookie dough, make sure to put it on parchment paper (this keeps it from sticking to your pan). **Get a little flour on your hands so it doesn't stick to those either!**
**You can use a rolling pin or your hands for this**
Just roll it out about as thick as you think a pizza crust would be. Even if you think your circle looks small go ahead and bake it as it will expand in the oven. Follow the directions for baking that on your package of cookie dough. You might have to cook it a little longer or shorter, just make sure you keep your eye on it as you don't want it to burn! 
Sauce:
Basically just mix the cream cheese, lemon juice, and powdered sugar together, it might be easier if you let your cream cheese sit out for a bit, but then let it chill in the refrigerator until your cookie is done baking...
Let the cookie completely cool before putting the sauce on, also let your sauce warm up a little before putting it on. I just used a spoon for this part remember it doesn't have to be perfect!


Then adorn your pizza however you like with whatever you like! 
 Make sure to keep it cold until your ready to serve, then just cut it just like you would a pizza with a pizza cutter! It was pretty easy! Enjoy your piece as it will go fast just like it did with my family!
